Chicken Cacciatore
Brown pieces of chicken in 1/4 c oil (2 1/2 to 3 lb.)
In skillet in oil
2 onions – sliced 1/4 thick
2 clove garlic minced or (1/8 t dehydrated minced garlic is 1 clove)
cook till tender but not brown
Return chicken to skillet
Mix following and pour over chicken in skillet
1 – 1 lb can whole tomatoes
1 – 8 oz ” tomato sauce
1 tsp. salt
1/4 tsp. pepper
1 or 2 bay leaves
1 t. dry oregano or basil
1/2 t. celery seed
Cook simmer 30 min and add 1/4 c. sauterne* & cook 15 min. longer uncovered.

Chicken Kiev
370° for 8 min.
Skinned & boneless breast of chicken – flattened. Take skin off & cut breast from bone.
Pound these pieces flat on wax paper & covered with wax paper with rolling pin.
For each breast
1 1/2 tsp. margarine
1/4 c. chives, salt & pepper
Fold sides up over the above & roll ends up
Roll in bread crumbs & then beaten egg & milk & back in bread crumbs. Chill 20 min or more & fry.
May be frozen for 2 weeks & thawed in refrig.
Fry in peanut oil
Cook in 370° fat in deep
White rice on plate & place chicken on top.
May be served with mushroom sauce.

Luau Chicken Salad
2 c. diced, cooked chicken
1 c. pineapple chunks, drained
1 c. diced celery
1/4 c. flaked coconut
1/4 c. chopped toasted almonds
1 c. mayonnaise
Fresh pineapple, cut in half lengthwise
Combine and chill. Cut a fresh pineapple in half lengthwise and scoop out the fruit, sugar and serve with the salad.
The chicken salad is served in the scooped out pineapple shells.

Chicken Murphy
10 to 12 chicken legs & thighs
1 jar Peperoncini peppers
1 jar sweet red peppers
1/3 cup cider vinegar
6 Tablesp. Worchester. sauce
1 Tablesp. minced garlic
1 Tabelsp. salt
1 teasp. black pepper
2 red onions
2 white onions
Bake chicken 400° for 45 minutes. Cool & pull chicken off bones (in strips)
Slice Peperoncini & sweet red peppers.
Slice red & white onions.
Combine – vinegar, worchester sauce, garlic, salt & black pepper
Preheat frying pan or wok with 1/4 inch of oil.
Put chicken in hot oil and stir – add all other ingredients. Cover & cook for 1 hour.
Serve over rice.

Chicken Squares With Mushroom Sauce
3 cups diced cooked chicken or turkey
1 cup cooked rice
2 cups soft bread crumbs
1/3 cup diced celery
1/4 cup chopped pimento
4 eggs beaten
2 tsp salt
1/4 tsp poultry seasoning
2 cups chicken broth
Combine chicken, rice, bread crumbs, celery, pimento. To the beaten eggs add salt, poultry seasoning & broth. Mix thoroughly. Stir into chicken mixture. Bake in greased 9x9x2 baking dish in mod oven 350° for 55 mins.
Cut in squares & serve with cream of chicken soup with added mushrooms.

Chicken & Rice Balls
1/2 cup chopped celery
1/4 cup sliced green onion
2 tb butter or margarine
2 tb all purpose flour
1/4 cup chicken broth
2 cups cooked rice
1 1/2 cups diced cooked chicken
1/2 cup (2 ounces) shredded process American cheese
1 beaten egg
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon poultry seasoning
1/2 cup cornflake crumbs
1 can condensed cream of mushroom soup
1/4 cup milk
2 tablespoons sliced green onion
Cook celery and the 1/4 cup onion in butter or margarine till tender. Blend in flour, add broth. Cook and stir till thick. Stir in rice, chicken, cheese, egg, and seasonings. Form into 12 balls; roll in crumbs. Bake in 13x9x2 inch baking pan in 350° oven for 25 to 30 minutes. Heat remaining ingredients. Serve over balls. Makes 4 servings.

Chicken Dish
Brown chicken – remove chicken from skillet.
Then brown in chicken drippings – 1/2 c. sliced onions
Place chicken back in skillet.
Add following ingredients to skillet–
1 can Bisque of Tomato Soup
1/3 cup water
1 Tbsp. lemon juice
Dash each of cinnamon & cloves
Cover and simmer until chicken is tender – about 45 mins.
Uncover and cook until consistency is right.

Spiced Ginger Chicken
1 lg. fryer cut up
1/2 cup orange marmalade
1/3 cup oil
1/2 envelope Good Seasons Garlic dressing
3 tablespoons red wine vinegar
1/2 teaspoon ginger
Put all ingredients except chicken in blender. Blend till mixed.
Arrange chicken pieces in an open pan, pour blended mixture over it.
Bake at 350 degrees 1 1/2 to 2 hours basting often. Bring hot chicken in a foil wrapped baking dish.
Serves 4.
