Cucumbers in Sour Cream
1 c. sour cream
1/2 tsp salt
1 tsp sugar
Dash of cayenne pepper
1 Tbsp. lemon juice
2 Tbsp. vinegar
Pour over 3 sliced & peeled cucumbers and chill.
(Allow cucumbers to set in salt water until you add sour cream mixture)

Spicy Pumpkin Pancakes
2 c. flour
2 Tbsp. sugar
4 tsp. b. powder
1 tsp. salt
1 tsp. cinnamon
1 1/2 c. milk
1 c. canned pumpkin
4 eggs, separated
1/4 c. butter, melted
Sift together into a large bowl the flour, sugar, b. powder, salt and cinnamon. Combine the milk, pumpkin, egg yolks and butter; pour into the dry ingredients and stir just until blended. Beat egg whites until stiff; fold into batter. Grease griddle lightly. Pour on batter, about 1/4 c. at a time. Cook until top is bubbly and dry and bottom deeply browned; turn and cook other side until browned.
Makes about 2 doz. 2 to 4-inch pancakes.

Cheesy Baked Corn
1 16 oz. can whole kernel corn
1 6 oz. can evaporated milk
1 beaten egg
2 Tbsp. finely chopped onion
1/2 tsp. salt
Dash pepper
3/4 c. shredded process Swiss cheese
Combine all ingredients.
Turn into 10x6x2″ baking dish.
Bake at 350° for 25 minutes.

Cheesey Creamed Corn
1 (1 lb.) can whole kernel corn (can also use 2 cups fresh corn)
3 oz. cream cheese
1/4 c. milk
2 Tbsps. chopped pimento
1 Tbsp. butter
1/2 tsp. onion salt
Combine together in skillet and heat.
Add corn.
Heat through and serve.

Corn Curry
1/4 c. butter
3 c. whole kernel corn
1/2 tsp. curry powder
2 Tbsps. chopped (green) red pepper
2 Tbsps. pimento
3 Tbsps. chopped onion
Heat through (around 8 – 10 mins)
Turn heat off and add:
3/4 c. sour cream
1/2 tsp. salt
Dash pepper

CONFETTI CORN
No. 303 Avondale Cream style golden corn
1/2 cup milk
2/3 cup bread crumbs
2 tablespoons chopped onion
2 tablespoons chopped green pepper
2 tablespoons chopped pimento
1/8 teaspoon pepper
2 tablespoons butter or margarine
Combine ingredients. Pour into buttered casserole. Bake at 350° for 40 minutes. Serves 6.

Scalloped Corn
1/2 c butter or margarine
1/4 c sugar
1 T flour
1/2 c evaporated milk
2 eggs – well beaten
1 1/2 tsp. baking powder
2 10 oz pkg frozen corn
Melt butter in a saucepan.
Stir in sugar and flour. Remove from heat.
Stir in evaporated milk, eggs and baking powder.
Fold in corn.
Transfer to a greased 1 1/2 qt casserole.
Bake at 350° for about 50 min.

Scalloped Corn
1 can (16 ounces) cream style corn
1 cup soda cracker crumbs
1/2 c. celery, chopped
1/3 c. onion, chopped
2/3 c. American cheese, shredded
1 tsp. salt
2 eggs, beaten
2 Tbsp. melted butter
1/4 tsp. paprika
1 cup milk
Combine all ingredients. Bake in greased 1 1/2 qt. casserole 50 minutes, or until done, at 350° F.
Serves 8.
