Cheese Sauce
Stir until melted & smooth:
8 oz. sharp cheese
3/4 c. water
In saucepan melt 1/3 c. marg, add 1/2 c. flour, 1 1/2 t. salt, 1 t. dry mustard, 2 t. worchester sauce, add cheese. Stir till smooth.
Add 1/2 c. inst. non fat dry milk with 2 T. water. Freeze to ice cream. Cut in cubes & freeze. Stir 6 cubes with 3/4 c. milk.

Lemon Butter Sauce Cubes
1/2 c. butter or marg – Melt & stir in 1/4 c. flour just until smooth.
Combine & add all at once–
1 T. sugar, 2 t. salt, 1 t. nutmeg, 1/2 t. lemon peel, 3 T. lemon juice, 3/4 c. water & few drops of yellow food coloring.
Stir until thick & pour into 8 x 4 1/2″
Freeze to consistency of ice cream. Cut in 32 sq. Put on cold cooky sheet & freeze solid. Pack in 4 pkgs. Use 1 pkg cubes & dissolve with 3/4 c. water. Heat till smooth & server over asap.

Woodstock
2 c. thick white sauce
1/2 lb. sharp cheddar cheese, cut into cubes
1 (6 oz) can mushroom caps and liquid
2 Tbsp. sliced pimiento
1 (5 1/2 oz) can chow mein noodles
6 hard-cooked eggs, sliced
1/4 c. thin-sliced green pepper
Add cheese to white sauce and heat in double boiler over boiling water until cheese is melted.
Add eggs, mushrooms and their liquid, pimiento and green pepper.
Heat.
Serve over crisp noodles.
Makes 5 to 6 servings.

Sweet and Sour Pork
1 1/2 lbs. pork, cubed or sliced
Brown in 2 Tbsps. butter or margarine
Sweet & Sour Sauce:
1/2 cup water
2 Tbsps corn starch
1/3 cup vinegar
1 cup (no. 2 can) pineapple juice
1/2 tsp salt
1/4 cup brown sugar
Cook until clear and thick.
Pour over browned pork. Cook 30 minutes.
Then add:
2 medium onions, sliced thinly
1 medium green pepper, sliced thinly
No. 2 can pineapple chunks
Cook an additional 3 minutes.
Serve over rice.

Eggs Foo-Young
1/2 cup chopped onion
1 cup finely chopped celery
3 Tbsp. oil
1 – 6 oz can crabmeat
8 eggs, slightly beaten
1 tsp. monosodium glutamate
Fry onion and celery in oil in heavy skillet until tender & barely golden brown.
Add crabmeat, stir and add eggs.
Sprinkle with MSG.
Fry like one large or several small pancakes on very slow fire, turning over when brown on one side.
Serve with soy sauce.
Makes 1 large or 8 small pancakes.

Cucumbers with Sour Cream Sauce
Peel cucumbers & run fork down side & slice thin
Let stand in salt water & drain
1/2 c. sour cream
tiny dash salt
1 Tbsp. vinegar
Paprika over top for color

Golden Star Baked Beans Soup
2 cups beans: cover with water; add 2 Tbsp. salt. Soak overnight. Drain & rinse.
Add 2 qts water
1 ham hock
1 large onion
Simmer for 2 1/2 to 3 hrs. Then add:
1 large can stewed tomatoes
1 large red pepper
1 tsp chili powder
1 garlic
juice of 1 lemon
Bake 30 to 40 mins.

Pasta Dish
6 oz penne or other tube pasta
3/4 lb ground beef
1 can chunky pasta style stewed tomatoes Lg
1 c sliced green onion
1 pkg cream cheese 303
1/2 c shredded swiss cheese
1/2 c Parmesan cheese
1/2 c shredded sharp cheddar cheese
Cook pasta & drain. Brown meat. Drain — add tomatoes. Cook uncovered until slightly thickened. Stir in onions & cream cheese. Toss remaining ingredients. Cover 2 min to melt cheese.
