Sizzling Sausage Stir-Fry
1-1 1/2 pounds Hillshire Farm Smoked Sausage or Polska Kielbasa, any variety, sliced into bite size pieces
3 tablespoons oil
1 1/2 cups raw rice
3 1/4 cups fresh or frozen chopped vegetables, like broccoli, carrots, onions, mushrooms
3/4 cup grated parmesan cheese
Seasoning, like salt, pepper, garlic, oregano
Cook rice and keep warm. Saute vegetables in oil until crisp and tender. Add sausage and season to taste. Heat thoroughly. Mix in 1/2 cup parmesan cheese and serve immediately over warm rice sprinkling with remaining parmesan cheese.
Total Preparation and Cooking Time: 15-20 minutes.

2 cans (5 oz. each) Swanson Premium Chunk White Chicken, drained
2 1/2 cups hot cooked corkscrew macaroni (about 2 cups dry)

Lite Sausage Primavera
1/2 of a (1-pound) package Creamette Spaghetti, uncooked
3 tablespoons olive oil
1 pound Hillshire Farm Lite Smoked Sausage or Polska Kielbasa, sliced
1 small red bell pepper, cut into strips
1 small onion, cut into wedges
1 small zucchini, cut into julienne strips
1 clove garlic, minced
2 teaspoons chicken-flavor instant boullion
1 teaspoon basil leaves
1 teaspoon salt
Dash cayenne pepper
Prepare Creamette Spaghetti according to package directions; drain. In medium skillet, heat oil. Add Hillshire Farm Sausage and remaining ingredients, except spaghetti. Stir-fry until sausage is browned and vegetables are tender. Add spaghetti; toss to coat. Heat through. Arrange on warm serving platter. Garnish as desired. Serve immediately. Refrigerate leftovers. 4 servings.

Mexicali Skillet Dinner
1 (7-ounce) package Creamettes Elbow Macaroni (2 cups uncooked)
2 tablespoons vegetable oil
1 pound Hillshire Farm Hot or Regular Smoked Sausage Links, sliced
1 medium onion, chopped
1 small green bell pepper, chopped
1 (16-ounce) can whole tomatoes, cut up (undrained)
1 cup frozen corn, thawed and drained
1 (16-ounce) can pinto or kidney beans, drained
1 teaspoon salt
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/2 cup finely shredded Cheddar cheese
Prepare Creamettes Elbow Macaroni according to package directions; drain. In large skillet, heat oil. Add Hillshire Farm Sausage, onion and green pepper. Cook until vegetables are tender. Stir in next seven ingredients. Bring to boil. Reduce heat; simmer 10 minutes. Stir in macaroni; heat through. Top with cheese. Cover. Cook over low heat until cheese melts, about 5 minutes. Garnish as desired. Serve immediately. Refrigerate leftovers. 4 to 6 servings.

Baked Chicken
3 or 4 lb. fat hen
Clean and drawn
Rub surface with salt and poultry seasoning.
Place breast down on rack in roaster or Dutch oven. Add 1 1/2 c. of water
Bake 3 hours or until tender.
Add noodles to broth and cook until tender.

Broiled Chicken
Marinate two broiling chickens in:
3/4 c. olive oil
1/2 c. chopped parsley
2 cloves of garlic, chopped
Let chicken stand in sauce 1 hour to overnight. Drain chicken. Place chicken on preheated broiler about 5″ from heat. Baste every 8 minutes with sauce. Should be finished in about 30 minutes. Note: Chickens can be cut in half or into serving pieces. Less garlic may be used satisfactorily.

Second Day Chicken
3 T. butter
1 T. flour
1 pk. cream cheese
1 pimento, sliced
1 t. salt
pinch of pepper
1 c. milk
1 c. chicken broth
or
1 boullion cube in 1 c. water
2 cups of diced chicken
1 1/2 c. cooked macaroni
Melt butter, add flour, cream cheese, pimento, seasonings. Mix well. Add milk and broth gradually to first mixture, stirring constantly. Boil for three minutes. Pour over chicken and macaroni. Cover with bread crumbs which have been buttered. Bake 350° 25 minutes.
