Chicken Pie
1 1 lb. can chicken in gravy or
1 – 10 oz. can chicken a la king
1 8-oz can Hunt’s Tomato Sauce
2 T. instant minced onion
1/2 t. rosemary, crushed
1 8-oz. can peas, drained
1 3-oz. can mushrooms, drained
1 5-oz. can boned chicken diced
1 pkg. refrigerated biscuits
Mix together all ingredients except biscuits. Heat and pour into 1 1/2 quart casserole. Cut biscuits in half and arrange on top of chicken mixture. Bake at 425° for 20 minutes. 4-5 servings.

Baked Ham ‘N Beans
1/2 c. chopped onions
1 1/2 T. Wesson, pure vegetable oil
1/2 lb. cooked and cubed ham
1 lb. 14 oz. can Pork & Beans
1 8-oz. can Hunt’s Tomato Sauce
1 T. Worcestershire sauce
1 t. prepared mustard
2 T. brown sugar
Saute onions and meat in Wesson until onions are golden. Mix in remaining ingredients. Pour into a baking dish; bake at 350°, uncovered, for 30-45 minutes. Serves 4.

After Ski Casserole
Can make ahead of time & ref.
Sm. pan (Saute for 5 minutes til tender)
1/2 c. green pepper and 1 Tbsp. butter
Large pan (white sauce)
3 Tbsps. butter, 3 Tbsps flour and 1 1/2 c. milk
Cook til thick, then add the following –
1/2 tsp. salt
1/4 tsp. basil
1/2 c. mayonnaise
2 c. cubed cooked ham
2 c. cooked rice
cooked green pepper
1/4 c. parmesan cheese, grated
1 (6 oz) can water chestnuts, sliced
Pour into greased 2-quart casserole.
Bake – uncovered – 350° for 25 mins. (if ref. bake 50 mins.)
Remove from oven & top with – 1 c. soft bread crumbs, 2 T. butter, and 1 Tbsp. parsley. Then bake an additional 10 minutes.

Everybody’s Broke Casserole
Large pan (saute til tender) covered with lid.
2 Tbsps. butter
4 or 5 carrots, sliced
1 large onion, chopped
1 c. celery, chopped
1 c. green pepper, chopped
When tender add–
1 lb. ground beef (Cook til crumbly, not browned)
Stir in–
2 c. tomato juice
1 tsp. seasoned salt
1 1/2 tsp. salt
3 or 4 med. potatoes, cubed
1/8 tsp. pepper
Simmer 20-30 minutes
Then add slowly–
1/3 c. flour and 1 qt. milk
Stir but do not boil!
*Serve with lettuce salad & corn bread.

Ground Beef Casserole
1 lb. ground beef cooked & browned with 1 tsp. salt and 1/2 cup chopped onion
1 lb. Tater Tots
1 can Cheddar Cheese Soup diluted with 1/3 can milk
Place in a 1 1/2 quart casserole –
1/2 of ground beef mixture
Tater Tots
Other half of ground beef mixture
Top with cheddar cheese mixture
Bake 350°F. oven for 45 minutes.

Cabbage Casserole
Cook shredded cabbage 7 min. in boiling water, then drain.
1 quart casserole (sprayed with Pam)
1 quart shredded raw cabbage
Cook until thickened–
1 Tbsp. bacon dripping with 1 cup milk
1 Tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. paprika
Place cabbage in bottom of casserole.
Pour sauce over cabbage.
Sprinkle 2 cups (less) bread crumbs and 1/2 c. crisp bacon over top.
Bake 400° F. oven for 15 minutes.

Frank & Cabbage
325° for 25 min.
3 c. shredded cabbage cooked 5 min in
1/2 c water & 1 tsp salt
1 lb franks cut in 1″ pieces
3 apples sliced
Place in 2 qt. casserole over which pour the following sauce
Sauce
1/4 c brown sugar
2 T corn starch
1/2 tsp salt
1/2 c vinegar
1/2 c water
Cook till thickens & add 2 Tbsp butter
Top with
1/2 c. cracker crumbs over top & dot with butter (1/4 c. all together)

1 can cream mush. soup
1 4 oz. can mushrooms
1 pkg. dry onion soup
1/2 c. water
Bake 3 hours covered 325°
Serve with rice or noodles.
