Simplified Poillian (Spanish dish)
350° for 1 hr.
Spray pam on oblong pan 13x9x2
Brown 2 1/2 or 3 lb chicken in 2 T. shortening seasoned with salt & pepper
Combine and put in oblong pan:
1 c. uncooked long grain regular rice
1/2 envelope dry onion soup mix
1 can (13 3/4 oz.) chicken broth
1/2 cup or (4 oz can) sliced mushrooms, drained
1 pkg. (10 oz.) frozen peas
1 can (4 1/2 oz) shrimp
Top with chicken.
Sprinkle with paprika, salt & pepper.
Cover with foil.

20 Minute Lunch
(4 servings)
1 can (10 1/2 oz) condensed cream of mushroom soup
1/2 cup milk
1/2 cup diced cooked beef
1/4 cup finely chopped onion
1 cup shredded cheddar cheese
2 cups cooked elbow macaroni (about 1 cup or 4 oz. uncooked)
2 tblsp. buttered bread crumbs.
In a buttered 1 1/2 quart casserole, blend soup, milk, beef, onion, 1/2 cup cheese, and macaroni.
Sprinkle remaining cheese and crumbs on top.
Bake in a hot oven (400°) about 20 minutes or until browned and bubbling.

Cheese Croquettes
Beat until stiff peaks form – 4 egg whites
Mix together and fold in:
1/4 c. flour
4 c. grated (1 lb.) American Cheese
1/2 tsp salt
Shape into croquettes, logs or balls.
Roll in fine cracker crumbs.
Fry in deep fat (375°) over medium flame until golden brown. Drain on absorbent paper. Serve hot as meat substitute or accompaniment.
Makes approximately 8.

Okay Deviled Eggs
Egg substitute equivalent to 3 eggs
2 T. low-sodium mayo
2 t. low-sodium prepared mustard
1/8 t. pepper
1 t. vinegar
6 eggs, hard-cooked and cooled

Breakfast Sausage Strata
1 lb. bulk turkey sausage
about 10 firm slices of bread, remove crust
1/2 stick marg.
1 1/2 c. shredded sharp cheddar cheese
8 eggs, beaten
1 c. skim milk
1/2 t. salt
Grease 9x13x2 pan, spread marg. on both sides of bread. (RecipeCurio note: bread should be arranged in the baking dish)
Crumble sausage in skillet, cook. Keep in small pieces; drain fat.
Spread sausage over bread.
Spread cheese over sausage.
In bowl mix beaten eggs, milk & salt. Pour over cheese. Cover & Chill overnight.
Preheat oven to 350°
Take out of refrig. & let stand 15 min. before baking.
Bake uncovered about 45 min.
Let stand before serving.
Serves: 8 to 12

Beef Roast Chop Suey
Melt 1 T. butter or shortening
Add 1 med onion & saute
and add 1 can roast beef with gravy.
3/4 c water and cover & simmer 5 min.
Mix add to above and cook till thickened:
1/2 tsp. sugar
1 T. corn starch
1 T. soy sauce
And add:
1 c. sliced celery
1 can (1 lb.) chop suey vegetables drained
Cook through, about 10 min.
Serve over rice or fried noodles.

1 c. long grain rice
1 3/4 c. boiling water
2 T. butter
1 t. salt
Combine in 1 1/2 qt. casserole and cover.

1# Chop Suey meat (serving size)
1/2 t. salt
2 T. butter (shortening)
Melt shortening — add salt — brown meat — add 1 c. coarsely sliced celery & 1 c. onion coarsely sliced.
Add 1 can mushroom stems & pieces (undrained) & 1 c (#1) bean sprouts, drained.
Gravy
3 T. corn starch, 1 c. cold water & 1/4 c. soy sauce
