Flaky Pie Crust

2 1/4 cups sifted all-purpose flour
3/4 tsp salt
3/4 cup shortening
6-7 tbsp ice water

Sift flour and salt together. Blend shortening with dry ingredients either by cutting together with 2 silver knives or with pastry blender. Cut back and forth through mixture until particles are the size of peas. Sprinkle water, a few drops at a time over mixture, working it in lightly with a fork until all particles are moistened and in small lumps. Divide in half; form 2 balls. Wrap in waxed paper and chill for 1 hr.

Kentucky Pie

1 8-9 in. unbaked pie shell
2 eggs lightly beaten
1 cup sugar
1/2 cup flour
1/2 cup butter, melted & cooled
1 cup walnuts or pecans
1 cup chocolate chips
1 tsp. vanilla

Preheat oven to 425°

Bake pie shell 8 min. or until set. Remove.

Reduce oven to 350°

Beat together sugar & eggs (add sugar gradually).

Stir in flour, butter, nuts, chips. Add vanilla.

Pour into pie shell & bake 35 min.

Let it cool.

Apple Crisp
350°
45 – 60 min.
6 – 8 servings

6 tart apples – sliced into 11x7x2 pan
1/2 c. orange juice – pour over above

Combine: 1/2 c. sugar, 1/2 tsp. cinn & add
Combine: 3/4 c. flour, 1/2 c. sugar, 1/4 tsp salt

Cut in 6 tbl. butter until crumbly. Spoon over apples.

Serve: warm or cold with milk or cream

Bring to boil & pour over crackers in crust:

3/4 c. sugar
1 1/2 c. water
1 1/2 tsp. cr. of tartar
1/2 tsp. nutmeg
2 tbl. butter
1 tsp. cinnamon

16 crackers

Handwritten Recipe Card For Colonial Chess Pie

Colonial Chess Pie

1 1/2 c. granulated sugar
1 c. light brown sugar
1/4 c. sifted flour
1/2 t. salt
4 eggs
1/2 c. butter
1/2 c. milk
2 t. vanilla

Heat 1 c. of granulated sugar, brown sugar, milk, flour and butter to dissolve. Cool.

Beat 3 egg yolks and 1 whole egg, well, add 1 t. vanilla, salt, mix well with the cooled mixture.

Pour in unbaked pie shell.

Bake 35 to 40 minutes in 350°F oven first, then lower temperature to 250°F to finish baking.

Pie will puff across top when done. Remove from oven.

Beat the 3 egg whites for topping, add 1/2 c. gran. sugar & 1 t. vanilla to beaten egg whites & cover pie with mixture. Return to oven and brown.

Apple & Cheese Pie

1 – 9″ unbaked pie

NO TOP CRUST

2 or 3 peeled & sliced apples (1 1/2 c to 2 c)
3 Tbsp. sugar – 1/2 tsp. cinnamon – Dash of nutmeg

Sprinkle sugar over apples.

Mix together:

3/4 c. cottage cheese
2 eggs, slightly beaten
1/2 c. sugar
1/2 c. half & half
1 tsp grated lemon peel
1/8 tsp salt

Pour over apples in pie shell.

Bake 425° for 10 minutes. Reduce heat to 350° for 30 minutes.

Handwritten Recipe Card For Granger Pie

Granger Pie

Make a pie crust and line 4 pie pans.

Put 1 cupful of baking syrup in a bowl, 1 teaspoon of baking soda and 1 cupful of boiling water. Stir well and divide into the 4 pie crust lined pans.

Now take 3 cups flour, 1 cup sugar, 1/2 cup shortening, mix well and put over the top of the syrup.

Bake in a moderate oven. (Very Good).
