Chicken combo casserole

2 cups cooked chicken or turkey or pork or beef, cut in 1/2-in. cubes
1 cup seasoned bread stuffing cubes
1 can (1 lb.) mixed vegetables, drain reserving liquid
1/4 cup finely chopped onion or
1 tbsp. dried minced onion
2 tbsp. chopped pimiento, if desired
1 tsp. salt
1/4 tsp. pepper
Reserved 3/4 cup liquid (add water if necessary)
3/4 to 1 cup mayonnaise or salad dressing
Topping
3/4 cup Pillsbury’s Best All Purpose Flour*
1/2 tsp. salt
1/2 tsp. celery seed
1 cup shredded American or Cheddar cheese
1/4 cup mayonnaise or salad dressing
1/4 cup chopped almonds
OVEN 325°

Casserole: Combine all casserole ingredients. Spread in bottom of ungreased 12×8-in. (2 qt.) baking dish. Crumble Topping over meat mixture; sprinkle with almonds. Bake at 325° for 30-35 min. until hot. Broil 3-5 min. until top is golden and bubbly.
Topping: No need to sift flour; measure by lightly spooning into cup and leveling off. Combine flour, salt, seed, cheese and mayonnaise; mix.
*For use with Pillsbury’s Best Self-Rising Flour, omit salt in Topping.

Crazy crust pizza
1 1/2 pounds ground beef or sausage or 1 cup thinly sliced pepperoni sausage
Batter
1 cup Pillsbury’s Best All Purpose Flour*
1 teaspoon salt
1 teaspoon Italian seasoning or leaf oregano
1/8 teaspoon pepper
2 eggs
2/3 cup milk
Topping
Meat mixture
1/4 cup chopped onion, if desired
1 can (4 oz.) well-drained mushroom stems and pieces, if desired
1 cup pizza sauce**
1 cup (4 oz.) shredded Mozzarella cheese
OVEN 425°

In medium skillet, brown ground beef or sausage, seasoning to taste. (No need to brown pepperoni.) Drain well. Set aside. Lightly grease and dust with flour or cornmeal 14 or 12-inch pizza pan or 15×10-inch jelly roll pan.
Prepare Batter. No need to sift flour; measure by lightly spooning into cup and leveling off. In small bowl, combine flour, salt, Italian seasoning, pepper, eggs and milk, mixing until smooth. Pour batter into pan, tilting pan so batter covers bottom. Arrange Topping of meat, onion and well-drained mushrooms over batter.
Bake on low rack in oven at 425° for 25 to 30 minutes until pizza is deep golden brown. (Deep brown gives a crisp crust.) Remove from oven; drizzle with pizza sauce and sprinkle with cheese. Return to oven for 10 to 15 minutes.
*For use with Pillsbury’s Best Self-Rising Flour, omit salt.
Tip: For 13×9-inch pan, use 3/4 cup flour, 1/2 teaspoon salt, 1/2 teaspoon Italian seasoning or leaf oregano, 1/8 teaspoon pepper, 1 egg and 2/3 cup milk for batter. Top with 3/4 pound browned ground beef or sausage or 1/2 cup thinly sliced pepperoni sausage; 2 tablespoons chopped onion, if desired; 1 can (2 oz.) well-drained mushroom stems and pieces, if desired. Prepare and bake as directed above. Top with 2/3 cup pizza sauce and 1/2 cup shredded Mozzarella cheese. Bake as directed.
**If desired, use 1 can (8 oz.) tomato sauce, 1 to 2 teaspoons leaf oregano and 1/4 teaspoon pepper as a substitute for the pizza sauce.

Pineapple Casserole
Serves 7-8
3 eggs
1/2 c. sugar
1 #2 can crushed pineapple & juice
5 slices bread
1/4 lb. butter
Crumb bread, no crusts. Mix with melted butter. Beat eggs until light. Add sugar. Add remaining ingredients. Bake 40 minutes 350°.

24 soft corn tortillas
16 oz. grated cheddar cheese
Brown:
3 lb. ground beef
1 lg. onion, chopped
in cooking oil.
Add:
2 – 4 oz. cans green chilies
2 cans cream of chicken soup
2 cans mushroom soup
2 – 10 oz. cans enchilada sauce
Layer tortillas & meat sauce in greased baking dish. Cover grated cheese.

Rice Casserole
1 – 10 1/2 oz can Campbell’s Beef Consomme Soup
1 – 10 1/2 ” ” ” Onion Soup
1 – 4 oz can mushrooms
1/2 stick oleo
1 c of uncooked long grain rice
Mix together & bake at 350° for 45-50 min.
Do not add any water to the soup.

1 cup converted rice
2 cups water
1 stick oleo
1 pkg. frozen chopped broccoli
1 pkg Lipton’s Onion Soup Mix
1/8 cup lemon juice
You can add 1 small can of mushrooms, but this is optional.
Place all ingredients into casserole dish or covered pan and bake 45 minutes at 375°. Remove from oven and mix thoroughly. Bake 15 to 30 minutes longer.

1 medium onion
1 1/2 # ground beef
1 stalk celery
5 or 6 slices bacon
1 – 8 oz pkg spaghetti
1/4 # cream cheese
1 can tomatoes
pinch red pepper
salt & pepper
Cook spaghetti. Drain. Slice onion & brown in butter — Add beef & cook partially done. Add spaghetti, cheese, tomatoes & celery. Mix well. Pour into casserole & bake 25 min at 325°.
