SAVORY MEAT LOAF
Try out 2 thin 2-inch slices salt pork, diced; add 2 tablespoons finely chopped onion and cook until golden brown. Combine pork, onion, and drippings with 2 pounds ground round beef, 1/2 cup Minute Tapioca, 2 1/2 teaspoons salt, 1/4 teaspoon pepper, and 2 cups strained canned tomatoes. Mix thoroughly. Bake in loaf pan in hot oven (450° F.) 15 minutes; then decrease heat to moderate (350° F.) and bake 30 minutes longer, or until done. Serves 10.

I know it was when I have to scroll through a couple of pages to get to the year of my brith. Any way… Grandma cooked it in a Dutch oven on top of the stove for whatever seamed like forever to my little self. It’s really yummy comfort food. Thanks so much. Try it!
Bingo! I have spent two days sifting through my recipe collection looking for my mom’s tapioca meatloaf recipe. I think this is it. I loved it when I was a kid in the fifties, but when I made it for my husband in the sixties he didn’t care for it so I never made it since. As soon as I can get out of quarantine I’ll get some ground beef (assuming the stores have it!) and make some meatloaf.
