This handwritten recipe card was found in a large collection and is dated Tues. Feb 2, 1971. I’ve typed it out below along with a scanned copy.
Apple Pecan Coffee Cake
375° for 25 to 35 min. or till tester comes out clean
Mix in a mixing bowl;
Cream 1/4 cup shortening with 3/4 c. sugar
Add 1 egg and 1/2 cup milk
Add the following dry ingredients:
1 1/2 cup sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
Spread 1/2 batter in 9″ sq. or 9″ round pan (sq. would be best)
Spread the following filling over this after it is mixed:
1/2 cup brown sugar and 2 Tbsp. melted butter
2 Tbsp. flour and 2 tsp. cinnamon
Spread 1 cup canned apple slices over this.
Spread other half batter over this, then sprinkle following over top & bake:
3 Tbsp melted butter, 3 Tbsp. honey and 3/4 cup sliced pecans
Note: If you use fresh apples – slice and saute in 2 Tbsp. butter.

Fresh Apple Cake
2 cups sugar
3 cups flour
1 tsp. soda
1 tsp. salt
1 1/2 tsp. cinnamon
dash of nutmeg
Mix the above and then add
3 cups fresh diced apples (unpeeled)
Add 2 eggs
1 1/8 cup oil
2 tsp. vanilla
Nuts if desired
Batter will be thick – press down in pan.
Bake in 13×9 pan – for 45 min. in 350° oven.

Apple Cake
Beat in mixing bowl:
3 eggs
1 3/4 cups sugar and
1 c. salad oil
Sift – and add to above mixture–
2 c. flour
1 tsp salt
1 tsp soda
1 tsp. cinnamon
Stir in by hand
2 c. thickly sliced peeled apples & 1 c. chopped nuts.
Bake in 9×13 inch greased & floured pan.
350°F oven for 40-50 minutes.
Topping
3 – 4 tsp. flour
1 c. water
1/2 c. brown sugar
1/2 c. granulated sugar
1 stick butter
1 tsp. vanilla
Cook until thick. Serve over cake.
Boil 1 minute.

SWISS APPLE CAKE
1 package Pillsbury Swiss Style Batter Cake Mix
1 can (1 lb. 5 oz.) apple fruit filling
3 eggs
OVEN 350°
13×9-INCH CAKE
Combine in large mixer bowl cake mix, apple fruit filling and 3 eggs. Blend and beat as directed on package. Bake in a 13×9-inch pan, generously greased and lightly floured, for 40 to 50 minutes or until top springs back when touched lightly in center. Cool cake completely.
Top each serving with sweetened whipped cream spiced with cinnamon.
Note: If mixing by hand, mash fruit first.
At High Altitudes:
1. Prepare recipe above.
2. Bake at 375° for 35 to 40 minutes.

Craig’s Applesauce Cake
In large mixing bowl:
1/2 cup butter or Crisco
1 cup sugar
1 egg, slightly beaten
1 1/2 cups applesauce, sweetened
Then add the following —
2 tsps. soda
2 1/4 cup flour
1/2 tsp. cloves
1 tsp. cinnamon
1 tsp. vanilla
1/2 cup chopped walnuts
1 cup raisins
Place in greased tube or loaf pan.
Bake 350°F. oven for 30-40 minutes.

1 package Pillsbury Apple Cinnamon Coffee Cake Mix
1/4 cup golden raisins
1/4 cup chopped nuts
OVEN 400°
18 TO 24 BARS
Prepare coffee cake batter as directed on package. Spread in 13 x 9-inch pan which has been generously greased and lightly floured on bottom only. Top with drained apple slices and raisins. Sprinkle with topping mix and nuts.
Bake at 400° for 15 to 20 minutes or until wooden pick inserted in center comes out clean. Cool slightly and cut into bars.

LITTLE BLUEBERRY CAKES
1 package Pillsbury Blueberry Coffee Cake Mix
Almond Glaze
1 cup sifted confectioners’ sugar
1 to 1 1/2 tablespoons milk
1/8 teaspoon almond extract
1/4 cup toasted slivered almonds
OVEN 375°
18 TO 20 CAKES
Prepare coffee cake batter as directed on package. Fold blueberries and half of topping into batter. Turn into 18 to 20 medium paper-lined muffin cups. Sprinkle with remaining topping. Bake at 375° for 15 to 20 minutes. Cool slightly before removing from pans. Drizzle with Almond Glaze and sprinkle with toasted almonds.
Almond Glaze: Combine confectioners’ sugar, milk and almond extract to make a thin glaze.

Apple Angel Pie (Serves 6)
1 can Thank You Brand regular or new Lite apple pie filling
1 unbaked graham cracker crust
1/2 C. chopped pecans
1/4 tsp. nutmeg
1 tsp. cinnamon
1/4 tsp. salt
2 egg yolks, beaten
2 egg whites, stiffly beaten
Optional: Whipped cream topping or ice cream
Pre-heat oven to 350°. Combine pie filling, pecans, spices, salt and egg yolks. Fold in egg whites. Spread in crumb crust. Bake at 350° for 45 min. Top with whipped cream or ice cream.
