Swedish Meat Dish (cabbage rolls)

8 tender cabbage leaves, whole
2 1/2 cups ground steak
1 onion, minced
1 green pepper, minced
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup cooked rice
1 1/2 cups sweetened tomato juice

Parboil cabbage leaves for 3 minutes.

Mix meat, onion, pepper, rice and seasoning.

Put mixture into cabbage leaves, roll, and fasten with skewer or tie with string.

Place in baking pan and pour over them the tomato juice sweetened with 1 tablespoon sugar.

Cover and bake at 375° for 35 minutes.

Serves 8.

One Dish Chop Suey

1 lb. veal or pork
2 onions chopped (2 c.)
2 cups chopped celery
1 cup uncooked rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 can stem & pieces mushrooms (undrained)
2 Tbsp. soy sauce

Combine and put in covered casserole.

Bake 350°F oven for 1 hour.

Oven Chow Mein

Saute til tender:

2 Tbsps butter
2 c. diced celery
3-4 onions, sliced
1 lb. ground beef

Then add –

1 can mushrooms (opt)
1 can tomato soup w/ 1 can water
3/4 tsp chili powder

Simmer 20 minutes.

Layer ground beef (1/2)
” Chow Mein noodles (1/2 lg. can)
” Ground beef
” Chow Mein noodles

Shepherd’s Pie

This is a good way to use leftovers from a holiday meal.

Line a greased casserole with mashed potatoes.

Fill with leftover vegetables and cubes of meat.

Add bread crumbs and gravy and seasoning.

Cover with mashed potatoes and bake 350° for 40 minutes.

If you have no leftover gravy, beat an egg and add to it 1 cup milk. Pour this over meat and vegetables before putting mashed pot. on top.

350° 20 to 25 min.

Brown: 1 lb. ground beef; 1/4 c. onion

And then add following:

1 – 6 oz. tomato paste
1 – 4 oz mushrooms (stems and pieces)
pinch garlic and then
1 t. salt and 1/4 t. pepper

Cook 1 pkg (8 oz) noodles and add
1 c. sour cream
1 c. cream cottage cheese

Put layer of noodles, meat, noodles & meat and top with grated cheese.

Cheddar Casserole
350°F for 40 minutes or till top is firm

To 20 double crackers (break coarsely) combine
1 tsp. onion salt and 1/4 tsp. paprika

Then in separate bowl combine:

4 eggs (beaten till light and fluffy)
3 cups milk and
3 cups shredded cheddar cheese
2 tsp. Worcestershire sauce

Add two mixtures together and place in 2 qt. casserole (uncovered).

Set in pan with water 1″ deep.

Bake at 350°F. for 40 minutes or till top is firm.

3 or 4 drops Tabasco sauce
1 – 8 oz cooked macaroni
1 c. grated cheese
