Handwritten Recipe For Macaroni - Sausage Casserole

Macaroni – Sausage Casserole
400° for 25 min.

1 (8 oz) pkg elbow macaroni
1 lb. bulk pork sausage
1/2 c. chopped onion
1/2 c. green pepper strips
3 Tbsp. flour
1/2 tsp. salt
2 c. milk
2 c. shredded cheddar cheese

Cook macaroni in 3 qts. boiling salted water 7 to 8 min. drain well.

Brown sausage; remove & reserve 1/2 of sausage. Saute onion & green pepper in 2 Tbsp of fat.

Stir in flour and salt. Slowly add milk. Cook over medium heat, stirring, until thick.

Stir in 1 1/2 c. cheese.

Combine macaroni and sauce; turn into a greased 2 qt. casserole.

Top with 1/2 c. cheese and reserved sausage.

Bake at 400° for 25 min. or until golden.
