Pineapple-Zucchini Relish
3 1/2 qts. zucchini, peeled and grated
3/4 c. bottled lemon juice
48 oz. pineapple juice
1 1/2 c. sugar
Combine all ingredients and boil until hot throughout. Ladle into hot jars, seal and process in hot water bath for 30 minutes.
