This handwritten recipe card was found in a large collection, date unknown. I’ve typed it below (with a few adjustments for easier reading) along with a scanned copy.
Simplified Poillian (Spanish dish)
350° for 1 hr.
Spray pam on oblong pan 13x9x2
Brown 2 1/2 or 3 lb chicken in 2 T. shortening seasoned with salt & pepper
Combine and put in oblong pan:
1 c. uncooked long grain regular rice
1/2 envelope dry onion soup mix
1 can (13 3/4 oz.) chicken broth
1/2 cup or (4 oz can) sliced mushrooms, drained
1 pkg. (10 oz.) frozen peas
1 can (4 1/2 oz) shrimp
Top with chicken.
Sprinkle with paprika, salt & pepper.
Cover with foil.
