This handwritten recipe was found in a large collection, date unknown. I’ve typed it out below along with a scanned copy (front side only).
Scalloped Corn
1/2 c butter or margarine
1/4 c sugar
1 T flour
1/2 c evaporated milk
2 eggs – well beaten
1 1/2 tsp. baking powder
2 10 oz pkg frozen corn
Melt butter in a saucepan.
Stir in sugar and flour. Remove from heat.
Stir in evaporated milk, eggs and baking powder.
Fold in corn.
Transfer to a greased 1 1/2 qt casserole.
Bake at 350° for about 50 min.
