Rhubarb Coffee Cake
1/2 cup butter
1 cup sugar
1 egg, beaten
2 cups flour
3 teaspoons baking powder
1 cup milk
1 teaspoon vanilla
3-4 cups diced rhubarb
1/2 cup orange marmalade
Cover rhubarb with boiling water, immediately drain. Stir marmalade through rhubarb, set aside. Mix remaining ingredients, pour into buttered 9x 13 inch pan. Spread rhubarb-marmalade mixture over batter, bake at 350° for 40 minutes or until browned. Frost with powdered sugar icing, if desired.
