This is a handwritten recipe on a sheet of paper found in a box of old recipes purchased at a lot sale. It is addressed to Helen with a note at the bottom: “Do you have any NEW easy recipes for me? Nancy”. No date and typed as-is.

Pumpkin Cake
4 eggs
1 c. corn oil
2 c. pumpkin (Libby’s solid pack – 16oz can)
2 c. sugar (granulated)
2 c. flour
1/2 teas. cinnamon
2 teas. baking powder
2 teas. baking soda
1 c. chopped nuts
Mix ingredients in order given. Bake in 9 x 13 x 2 pan (greased and floured) at 350° for 45 min or until center springs back when touched or do the “old faithful” toothpick in the center trick, if it comes out clean it’s done. (Helen, check cake after 40 min. ovens vary).

Icing
1 box powdered sugar
1 stick oleo
8 oz. cream cheese
2 teas. vanilla
Beat with mixer until smooth. Spread on cooled cake.
