Louisiana Yam-Pecan Pie
1/4 cup soft butter
1/4 cup brown sugar, packed
1/8 teaspoon salt
3 eggs
3/4 cup dark corn syrup
1 1/4 cups mashed, Royal Prince Yams
1 teaspoon vanilla extract
1 1/2 cups pecans
1 unbaked 9″ pie shell
Cream butter and sugar. Beat in 5 ingredients. Add 1 cup nuts and pour into shell. Sprinkle 1/2 cup nuts over top. Bake in moderate oven (375°F.) 50 to 55 min. Cool.
