This recipe was written on a lined index card and found in a large collection, date unknown. Instructions are a bit sparse but still easy to figure out how to make these. I’ve typed it below along with a scanned copy (front side only).
Baked Beans
325°
2# beans – soak overnight
4 t salt
Cover with water 2 times their depth
Cook 2 hours
Drain – Save liquid
Add:
1 large onion – cut
1/2 c catsup
1/2 c molasses
2 T. b. sugar
2 t. dry mustard
1/2 t. black pepper
1/2 t. ginger
1/2 t. cinnamon
3 c of liquid
diced salt pork
Cook 3 – 4 hours – 325°
