This recipe was written on an index card and found in a large collection, date unknown. Recipe is typed below along with a scanned copy (spelling corrected).
Ham Casserole (or luncheon meat)
350° for 1 hour
2 c. cooked diced ham or 1 can lunch meat
2 c. tomatoes or 1 – 1 lb. can
1 – 6 oz. can tomato paste
1 – 4 oz. can stem & pieces mushrooms (undrained)
1 – 8 oz. pkg spaghetti
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. paprika
2 c. chopped American cheese
1 tsp. sugar
1/3 c. butter or margarine with 1/2 c. chopped onion & may add 1 c or 1 green pepper (sautéed)
Cook onion & pepper in butter and add to this 2 c. tomatoes, 6 oz. can tomato paste, 1 -4 oz. can mushroom pieces undrained, add ham or diced luncheon meat, then seasonings.
Heat to boiling point and then add cooked spag. and 1 c. cheese and heat till boils.
Pour into greased casserole & put 1 c. cheese on top & bake uncovered 350 for 1 hr.
