Corn Pancakes
1 cup sifted enriched flour
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 1/4 cups milk*
1 cup whole-kernel corn
2 tablespoons melted shortening.
Sift together flour, baking powder and salt. Beat egg. Add milk, corn and shortening. Add to flour mixture and mix well. Cook on lightly greased hot griddle.
*Written in pencil is marked “1 cup”
