This recipe was written on a lined index card and found in a large collection, date unknown. Recipe is typed below along with a scanned copy.

Chicken Cacciatore

Brown pieces of chicken in 1/4 c oil (2 1/2 to 3 lb.)

In skillet in oil

2 onions – sliced 1/4 thick
2 clove garlic minced or (1/8 t dehydrated minced garlic is 1 clove)
cook till tender but not brown
Return chicken to skillet

Mix following and pour over chicken in skillet

1 – 1 lb can whole tomatoes
1 – 8 oz ” tomato sauce
1 tsp. salt
1/4 tsp. pepper
1 or 2 bay leaves
1 t. dry oregano or basil
1/2 t. celery seed

Cook simmer 30 min and add 1/4 c. sauterne* & cook 15 min. longer uncovered.

My mother used this same recipe. It originates from a 1967 booklet “Cooking With Herbs and Spices”, published by the magazine Better Homes and Gardens.
