Carol’s Tortilla Stew
1 pound ground beef
1 teaspoon salt
1/2 teaspoon pepper
1 small onion, chopped
2 tablespoons chili powder
2 cups water
1 1-pound can tomatoes
1 10-ounce can tomato soup
1 15-ounce can ranch style beans
1 4-ounce can chopped green chiles
1 cup frozen cut corn
6 corn tortillas, torn into large pieces
Brown ground beef with onion and all spices. Add all other remaining tortillas and simmer for 1 hour. About 5 minutes before serving, add tortillas, continuing to simmer. Serve hot. Serve with cornbread.
