Magic Lemon Cream Pie Recipe Clipping

MAGIC LEMON CREAM PIE

1 9-inch crumb or baked pie shell OR 9-10 medium tart shells
1-1/3 cups (15 oz. can) Eagle Brand Sweetened Condensed Milk
3 egg yolks
1/2 cup lemon juice (fresh or ReaLemon)
1 teaspoon grated lemon rind (optional)

  1. Blend Eagle Brand and egg yolks.
  2. Gradually add lemon juice and rind, stirring until well blended. Pour into cool crust.

Meringue:

3 egg whites
1/4 teaspoon cream of tartar (if desired)
6 tablespoons sugar

Preheat oven to 350°.

  1. Beat egg whites and cream of tartar until frothy. Gradually add sugar while beating until stiff and glossy.
  2. Pile lightly on pie filling, spreading to touch crust. Bake until lightly browned, about 10 minutes. Cool.
