My mom used to make this Pie. I was a kid in the early 1970’s. The recipe used to come on the can. You don’t have to bake it because the Lemon Juice cooks the eggs. I don’t think she ever put Merengue on the pie that I can remember. I loved this recipe. She never wrote it down, but used the one on back of Borden Condensed Sweet Milk. Borden stopped putting this recipe on the back of the label so it’s 43 years since I had any. Now I can make it myself and write down the recipe for my mom, brother and daughter.
magic lemon pie
Didn’t haave a pie shell, so I used the little tart shells. Perfect size for 1.
Better poured into homemade graham cracker crust. My mom use to get this pie when we were down town shopoing in W.S.,N.C We would stop in at the Piccadilly Res. and get a piece of their Lemon Ice Box Pie. That is where we fist heard and tasted of it. Then momfound the recipe for it on Eagle brand milk. The rest is history. That kind of lemon pie caught on like fire back then.
Haven’t made this pie in over 10 years. After my husband passed away in 2012 never felt the need was his favorite he wouldn’t even share with our children, I always had to make 2 just so all the family could have just 1 slice. My daughter mentioned it the other day saying she sure did miss my lemon pie. Making her one tonight for family gathering
