This recipe was clipped from a newspaper and found in a large collection, date unknown. I’ve typed it below along with a scanned copy.

Vintage Recipe Clipping For Oatmeal Pie

IF YOU HAVE never tasted oatmeal pie you’ll want to try this, one of Mrs. Yankello’s specialties. It tastes like pecan pie without the pecans.

Oatmeal Pie

Three eggs, beaten
Two-thirds cup granulated sugar
One cup light brown sugar, firmly packed
Two tbsps. butter
Two-thirds cup flaked coconut
Two-thirds cup quick-cooking oatmeal
Two-thirds cup milk
One tsp. vanilla
Nine-inch unbaked pie shell

COMBINE ALL filling ingredients; pour into unbaked pie shell. Bake in pre-heated 375-degree oven 30 to 35 minutes or until silver knife, inserted in filling two inches from crust, comes out clean.

I live in a retirement home. This is a favorite of many residence! Sooooo good…I sometimes add
some pecans to it, when I make it.
