Mock Apricot Jam With Zucchini
Simmer 6 c. grated, peeled zucchini 10 min.
Add 6 c. sugar
1/4 c. lemon juice,
1 – 20 oz can crushed pineapple
2 small or 1 large box of apricot gelatin mix
Cook until sugar is dissolved, put into sterilized jars.
