This handwritten recipe card was found in a large collection, date unknown. I’ve typed it below (some adjustments made for easier reading) along with a scanned copy.
Golden Star Baked Beans Soup
2 cups beans: cover with water; add 2 Tbsp. salt. Soak overnight. Drain & rinse.
Add 2 qts water
1 ham hock
1 large onion
Simmer for 2 1/2 to 3 hrs. Then add:
1 large can stewed tomatoes
1 large red pepper
1 tsp chili powder
1 garlic
juice of 1 lemon
Bake 30 to 40 mins.
