This handwritten recipe card was found in a large collection, date unknown. I’ve typed it below along with a scanned copy (front side only).
Okay Deviled Eggs
Egg substitute equivalent to 3 eggs
2 T. low-sodium mayo
2 t. low-sodium prepared mustard
1/8 t. pepper
1 t. vinegar
6 eggs, hard-cooked and cooled
- Cook egg substitute according to pkg. directions for scrambled eggs.
- Mash scrambled egg sub. with mayo, mustard, pepper & vinegar. Cover & refrig. until chilled
- Halve hard-cooked eggs lengthwise & discard yolks.
- Fill each egg half with chilled egg sub. mixture & sprinkle with paprika.
Makes 12 servings.
